Fiesta Night!

Tonight, I made the most amazing meal. Ground turkey tacos with guacamole and home-made Mexican rice. It was so. good. See? It even looks pretty, right?


I haven't ever used ground turkey before, but I like the way it cooked up WAAAY better than ground beef, so I think I will be using it in the future. I just used the McCormick's taco seasoning (they are pretty good about being GF friendly - yay McCormick!) and some Mission tostadas. I threw some greens on for *ahem* health, and black olives since I had them around.

The rice was my real accomplishment - Luke and I love Uncle Ben's brown rice so we almost always have a box around. I cooked it in some beef broth (gluten free, of course) with some minced garlic and a little cumin, then drained a can of diced tomatoes and chiles and added that when it was done. All that this meal needed was a margarita...
