Three Things Thursday

Ugh, Three Things is hard for me to write today, because it's been a craptacular week in these parts. Nothing major, but the little things all add up. My apologies for the lack of sun shining out of my back end. I'll try not to completely bum everyone out.

1. If you are gluten-free, stop what you're doing right now and get yo'self some GF Bisquick. This was one of the first purchases I made after my diagnosis, and it's continued to be a staple in our pantry. Not only does it make some butt-kicking waffles, it also makes a killer stand-in for the Cheddar Bay biscuits I used to love from Red Lobster (those were the only thing I would eat there). And we discovered this week that it makes some delightful dumplings for chicken and dumpling soup (we just used the dumpling part of the recipe, and I made my own soup base, because I win at chicken soup).

2. Since I live in a world where I spontaneously break into tune, and often find myself making up the words as I go along, I took special delight in Sassy Celiac's video this week. I suggest you check it out, you'll thank me later.

3. Fit & Fab in February is wrapping up ... today-ish. Though I am feeling neither fit nor fab today, I can't wait to get the wrap-up posted, along with another guest post from Kelly!
